Preheat oven to 190C.
1 cup butter
1 cup white sugar
1 cup brown sugar
2 teaspoons baking powder
1 teaspoon salt
2 teaspoon vanilla
2 beaten eggs (just with fork)
2 and a half cups flour (not sifted)
2 cups crushed cornflakes (crush in plastic bag with your hands)
1 to 2 cups chocolate chips
Melt butter, add sugars, stir. Add baking p, salt, vanilla, beaten eggs. Mix well. Add flour, stir in. Add cornflakes and choc chips, mix well.
Form walnut-sized balls with fingers and place on greased sheet. Press down slightly with floured or greased spatula. Bake 8 to 10 min. Cool on cookie sheet for 2 mins, then to wire rack until completely cool. The rack is important – makes them crisp.
6 to 8 doz depending on size. If cookies spread too much in oven, reduce temp to 175C and don’t flatten.
